Cakes + Co. Carrot Cake

Cakes + Co have quickly become an institution in our lovely market town of Stamford. Their beautiful, Instagram-able layer cakes are available to buy by the slice at weekends, as well as  whole celebration cakes also available to order! Think chocolate, honeycomb and caramel cake, carrot and walnut mini loaves, vegan lemon and blueberry cake, raspberry trifle cake, black-forest pavlova … yeah, all the good stuff.

When they’re not busy running the cute café in a hidden corner of town, you can find Stuart and Jade at their allotment, where they grow edible flowers for their cakes and fresh produce for the delicious savoury dishes on their seasonal menu.

A visit to Stamford just isn’t complete until you’ve had a slice of cake from Cakes + Co. 

And if you’re not local then I have the best news! Stuart and Jade have very kindly agreed to share a recipe for one of their best-selling cakes for the Katie Alice blog – their favourite carrot cake!

Cakes + Co. Favourite Carrot Cake Recipe

Makes one large loaf or 8 mini loaves

  • 3 eggs
  • 150g soft dark brown sugar
  • ½ cup grapeseed or vegetable oil
  • 300g carrots – peeled and grated
  • 150g wholemeal flour
  • 15g baking powder
  • 1 tsp cinnamon
  • ¼ tsp ground nutmeg

Pre-heat oven to 165˚C fan/185˚C.

Grease a loaf pan with butter and line with baking paper.

In an electric mixer, whisk together the eggs and until well combined.

Slowly pour the oil while mixing to incorporate.

Fold in the grated carrot.

Sift together the flour, baking powder, and spices, then fold into the wet mixture.

Pour the batter into the prepared loaf tin and bake until a skewer inserted comes out clean.

Leave to cool in the pan before turning out.

This cake will keep for a good few days in an airtight container at room temperature.


Top with mascarpone cream cheese frosting, chopped walnuts and edible flowers for the full Cakes + Co. look! Make sure you store in the fridge once iced.
